Breakfast Skillet

Ingredients:

  • 2 ounces grass fed ground turkey or beef
  • 1 egg
  • 1 tsp butter
  • 2 cups homemade salsa (recipe below)
  • 1/8 avocado, sliced
  • 1 minced green onion

HOMEMADE SALSA

  • 1 cup diced tomatoes
  • ¼ cup diced onions
  • Cilantro to taste
  • 1 clove of minced garlic
  • 1 tbsp lime juice
  • 1 small jalapeño diced
  • Himalayan sea salt and pepper to taste

INSTRUCTIONS:

  1. Melt butter in skillet and add turkey/beef, cooking until done
  2. Add in salsa and mix together, cooking for 2-3 minutes
  3. Crack an egg on top of mixture and over for approx. 7 minutes until egg white is cooked thru
  4. Serve with sliced avocado and garnish with fresh cilantro, diced tomatoes and green onions
