Turkey Greens Frittata

Ingredients:

  • 6 ounces grass fed ground turkey or beef
  • 2 cup finely chopped greens (spinach, kale or collard)
  • 3 cloves of garlic, finely chopped
  • 1/2 cup diced onion
  • 1/2 cup diced mushrooms
  • ½ of a large tomato (sliced for topping)
  • 4 eggs
  • seasonings of your choice!

INSTRUCTIONS:

  1.  Stir everything (except tomato slices) together until well combined.
  2.  Pour into a small dish, top with tomato slices and bake at 350 until egg is fully cooked, approx. 7 - 8 minutes.
