Garlicky Spinach, Tomato and Egg Scramble

Ingredients:

  • 2 whole eggs
  • 1 cup fresh spinach
  • 3 cloves garlic, chopped
  • 1/2 teaspoon coconut oil
  • 1/8 cup chicken broth
  • 1/2 cup cherry tomatoes
  • 1/2 cup salsa, NO sugar
  • 1/8 avocado

INSTRUCTIONS:

  1. Sauté the garlic in the coconut oil over low to medium heat.
  2. Add the spinach and chicken broth. Cook until the spinach is completely wilted.
  3. Stir in the eggs and scramble everything together until the eggs are completely cooked,
  4. Top with cherry tomatoes and salsa.

This recipe makes 1 serving. This equates to the serving having - 3 ounces of Protein, 2 servings of vegetables, and 1.5 serving of Healthy Fat on the IHC.
