Egg and Vegetable Basil Scramble

Ingredients:

  • 2 eggs
  • 1 cup mushrooms
  • ½ cup green onion...
  • 1 teaspoon coconut oil
  • 1/8 avocado
  • ½ cup tomato
  • Fresh basil, for garnish
  • Himalayan sea salt and pepper, to taste

INSTRUCTIONS:

  1. In a medium to large skillet, scramble the eggs, mushrooms, and green onions in the coconut oil.
  2. Once done, transfer to a plate and top with the avocado, tomato and basil.
  3. Add Himalayan sea salt and pepper to taste and enjoy.
  4. Add pepper to taste.

On IHC's plan this would count as 2 servings of vegetables, 2 ounces of protein and 2 serving of essential fatty acids. -Enjoy!!
