Isreali Salad

Ingredients:

  • 2 c. diced cherry tomatoes
  • 2 c. diced English cucumber
  • ½ c. diced red bell pepper (optional)
  • ¼ c red onion, diced
  • ¼ c finely chopped mint
  • ¼ c finely chopped parsley
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp extra virgin olive oil
  • Sea salt, to taste

INSTRUCTIONS:

  1. Combine all ingredients together in a large bowl. Mix well.
  2. Season with salt to taste. Refrigerate until ready to serve.

Makes about 2.5 servings

Serving Size = 2 cups (1 serving of vegetables and 1 serving healthy fat)
