Butternut Squash Home Fries

Ingredients:

  • 1 teaspoon of Extra Virgin Olive Oil
  • 1 cup peeled, cubed butternut squash (½-inch cubes)
  • ½ cup onion, chopped
  • ½ cup red cherry peppers, seeded and chopped 1 teaspoon of garlic, minced
  • Whole eggs (organic, cage free is best) Himalayan Sea Salt, to taste
  • Pepper, to taste

INSTRUCTIONS:

  1. Heat 1 teaspoon of extra virgin olive oil in large skillet over medium high heat. Mix in squash and onion.
  2. Cover, and cook 5 minutes, or until squash begins to brown. Stir, cover, and continue to cook for 5 more minutes or until squash is tender and onions start to caramelize.
  3. Add peppers and garlic, and sauté for 2 minutes, or until fragrant. Season with Himalayan Sea Salt and pepper to taste.
  4. Return skillet to medium-high heat and drop in 2 whole eggs. Cover, and cook 2 minutes, or until whites are firm but yolks are still soft. Top home fries with eggs.
