Blueberry Muffins

Blueberry Muffins

Ingredients:

  • 2 cups almond flour
  • 3-4 drops of liquid stevia (more or less for taste preference)
  • 1 teaspoon baking powder
  • 4 room temperature eggs
  • ½ cup butter, melted
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup frozen blueberries

INSTRUCTIONS:

  1. Preheat oven to 350 degrees.
  2. Line muffin pan with liners.
  3. In medium bowl, mix together all wet ingredients.
  4. In large bowl, mix together all dry ingredients. (Except blueberries)
  5. Add wet ingredients into dry and mix until just combined. Do NOT overmix.
  6. Fold in blueberries.
  7. Place mixture evenly into 12 muffin liners, and bake for 20-25 minutes or until golden.
