Parsley and Garlic-Rubbed Oven Baked Salmon

Ingredients:

  • 4 (6-oz.) Alaska salmon fillets
  • 1-lb. asparagus, trimmed
  • 2 tablespoons extra virgin olive oil
  • Himalayan sea salt and pepper, to taste
  • Sliced lemon, for garnish
  • Parsley garlic salmon rub:
  • 1/4 cup finely chopped fresh parsley
  • 6 garlic cloves, minced
  • 2 tablespoons butter, melted
  • 1 teaspoon Himalayan sea salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  2. In a small bowl, stir parsley, garlic, melted butter, salt, and pepper together with a fork. Press the rub mixture firmly into the cut side of each salmon filet. Let the salmon rest for about 5 minutes before cooking.
  3. Place the salmon and asparagus on the baking sheet. Drizzle the asparagus with about 1 tablespoon of olive oil each. Then sprinkle with salt and pepper to taste.
  4. Place the sheet pan in the oven and bake for about 16-18 minutes, until the salmon flakes easily with a fork.
  5. Season with additional salt and pepper to taste. Garnish with additional parsley and lemon, as desired, and serve immediately.
